Few people _deploy_ OGo on OSX (some people including me use it for
development). There is a specific list macosx@opengroupware.org which
can help you with getting up and running (please read the archives
prior posting).
If you encounter no glitches it should be up and running in some 30
minutes. If you do, it might take significantly longer :-) As mentioned
OSX is not a primary deployment platform and not nearly tested as well
as the Linux packages.
I would suggest to use a cheap PC to run OGo instead of wasting the
precious OSX hardware on it ;-) (especially PPC hardware tends to be
much slower for the given task than even the cheapest ix86 hardware)

Yes, all templates are just regular WOComponents though in the case of
OGo the WOResourceManager is patched a lot (for theming and resource
lookup in FHS locations).
A lot of the components are reusable ones. We also use a lot of
advanced WODynamicElements from SOPE for speed reasons (which cannot be
easily changed w/o coding).

For OSX I tend to recommend the latest alpha release available (like
1.1.3), or maybe even trunk. Issues *do* come up now and then and we
definitely won't add OSX specific patches to OGo 1.0 (feature frozen).
