You must have experimental[1] repository sources to get evolution1.5
packages:

deb	http://ftp.uk.debian.org/debian/ experimental main
deb-src	http://ftp.uk.debian.org/debian/ experimental main

With theses sources, I can have:
# apt-cache policy evolution-exchange
...
     1.5.91-1 0
 ***      1 http://ftp.uk.debian.org/debian experimental/main Packages
...
# apt-cache policy evolution1.5
...
  Version Table:
     1.5.93-1 0
 ***      1 http://apt.debianfr.net experimental/main Packages
...

Try:
# apt-get -t experimental install evolution1.5 evolution-exchange

This should work (only with sid or sarge, don't try this with woody).
