For the moment, this feature is not available. Note that users who have no valid email address would not be able to go far...

For the proxyAddresses things, you can specify an array of fields to take into account during the requests. In you user defaults configuration file, you would need to add an entry named "MailFieldNames" to you LDAP directory. Beware that this is an array, which is noted between parenthesis in the property list format:

What would be useful is a sniff log of the transactions between your sogo server and your exchange server...

Please note though that Exchange does not support the IMAP SORT extension, of which SOGo make use when fetching mail headers.
