Those labels are part of the dock images (unfortunately).

So what you need to do is to create a set of Danish images based on  
the English ones. The images are located here:

   ls /usr/local/share/opengroupware.org-1.1/www/English_orange.lproj/ 
menu_*labeled.gif

You would place the localized images into:

   /usr/local/share/opengroupware.org-1.1/www/Danish_orange.lproj/
